I would like to create a flow that add a row to an Excel file with some values from a standard PDF form, so the data I want is always in the same place.
Now I don't have an AI license, so my question is there a way I can use standard flow functions to get the text parts I want out of the file content? (or any other way?)

The standard actions/ connectors do not support reading a PDF document.
The best way is to do it using the Form Processing AI model as the data will be best recognized using that.
Apart from the AI models, you can use OCR services (from Microsoft or other third parties) which is premium connectors and get the text from the PDF document.
