I'm trying to send emails to specific users requesting data of certain items, these items must be created after July 1st 2020, however, I'm not sure what should be the correct condition to validate the creation date of the items.
Could you please help me to define what is the correct condition/comparison to validate if the creation date was July 1st or later?

Try something like in expression.
If this doesnt work try saving both the dates in a two different string variable and them compare strings.

To be sure of using comparable formats, put the [created] field inside a FormatDateTime function with the same format string.
Note that you might need to convertTimeZone too depending on your environment settings.
I will create a static date with 1 July 2020 and the condition will be if created date its greater then static date.
To do that you need to use date/time to convert created date and static date to something condition can read.
Please see my screen shot below - that's all you need to do, SharePoint stores data internally in yyyy-MM-dd format. Watch out for time zone issues.
