How can I set another email in the Calendar invite that get generated using Create Event action? it's using my email that I used to create a Flow, I like to use service account instead.

Do you want to change the sender of the event invitation email?
You could try changing the connected account of the Create event (V2) action.
Click on the ellipsis, add a new connection, use the service account you mentioned as the connection account.
