I have created a custom connector which makes an API POST call to a service endpoint, the response from the API needs to be updated on a table. But i cannot figure out how or using which connector will it give me access to the corresponding response

Once the Custom API is created, you could consider to register your custom connector in Microsoft Flow. Then create flows based on the connector you have created. Please see this doc for more details:
I understand what it is that the links you shared are saying, i had gone through them earlier. I have made a few changes to my OpenAPI json file, and will try to make it work.
The major issue i am facing is that whatever json i receive in the response of the API call, i need to use that as input for the following connector, so that bridge is something i think i am missing.
I finally managed to capture the response by using a "Parse JSON" connector, in which i supplied the data from where the result needs to be extracted in the custom connector API and then define the schema of the response. This helps to capture the response from the api which can be used in the following actions as input after the Parse Json step.
