What data does Microsoft log/store for each Flow instance, and how long is the data retained? Is it possible to turn off data logging for a specific Flow or by account? For example if a Flow is moving around sensitive data, we would not want it to be kept on the servers.

Mostly the flow you have created would only keep the configuration you have specified.
There should be no actual data stored within Microsoft Flow.
Microsoft Flow uses connections to access data, verify for the trigger condition, then fire the Actions configured after the Trigger.

Thanks, but is there any sort of official publication saying whether Microsoft does or does not store data, even for diagnostic purposes, such as what Zapier has here?

This isn't a question about DLP. I'm asking what Microsoft's data retention policy is regarding data that moves through the Flow service. It doesn't appear that there is an answer, so I can't be sure what data is being stored and for how long.
