I have a flow that sends an email when someone creates a new sharepoint list item.
Right now, all the emails look like I sent them (they even show up in my own Sent folder).
I want the email to come from whomever created the list item, but does that mean I personally need permission to send-as every single person in our company?

Yes, Email actions rely on personal accounts to create connections, so emails are sent from personal mailboxes. You need to set up Send As to display the specified user, but you need the corresponding permissions.
