Getting rid of unwanted characters (ž)?

In flow, I have a Variable that is JSON.  One of the json values is a dynamic value set by another field in the Flow.

 

When you do this, it puts a ž character around the dynamic values that you load.

 

I later parse this Json and send an email with its value.

 

When I send an email (as html), it flags it as charset=windows-1256 and the formatting is all wonky. I can see the ž when I view the source code of the email from Outlook.  But I can't see it at any stage of the Flow itself.  Does anyone know how to "force" a variable to become ASCII within Flow?

Could you please share a screenshot of the configuration of your flow?

Could you please share more details about the JSON?

Sure, here are some screenshots.  Again it is specifically when doing a Compose to create JSON that has a variable of some sort in it.  Then parsing the JSON to be able to pull out the values.

 

I've attached 3 pics.  The first is the Compose and Parse JSON actions.

The second is a view of it running

And the third is an html view of the email received
