I want to know if it is possible to complete different Forms and add the info to the same list?
I have a process where different users must enter different details.
I do not really want users to edit the list. SO I was hoping to use different forms for each section of the list that must be completed.

Thanks, the screenshot clarifies what you are trying to do.
You will need to have a field which will exist in both forms that will act as a lookup. Without this, your 2nd flow wont be able to identify the response of the first flow to update.
As you cannot create lookups in Forms, this will need to be free text and imo, not recommended as a typo will result in a mismstch and data issues.
Is PowerApps an option?

Sure, you can have multiple forms which triggers its own separate flow and writes to the same list in SharePoint.
You simply need to configure the SharePoint Add Item action to reference the same list.
You may run into challenges if you have mandatory fields in different sections of the list though.
