Is there any way to get Usage information of Power Platform from API's?
I'm trying to fetch info as admin like
How many power apps user got in the tenant.
How many flows
Last Runs, using apps or not
If there is any other way as well rather than APIs, I'm open to suggestions.

If you are looking on getting insights in usage and governance I can highly recommend looking at the Microsoft Power Platform Center of Excellence (CoE) Starter Kit:

One of the components of this kit is a Power BI Dashboard which I think is meeting your three requirements:

You can see usage analytics from Power Platform admin centre including flows and apps for each environment.
Alternatively, I recommend setting up the CoE starter kit core components here. It contains an Admin view model driven app and PBI dashboards.

I'm trying to fetch the same data from Rest API, https://rencore.com/ these guys claim to get this data from REST API. When you connect the tenant they request permission of "Windows Azure Service Management API" to fetch power platform results. I can't find a way to get data from this API. I'm sharing the application link as well which they registered as Enterprise App.

There are definitely some endpoints which you can use to interact with this type of data.
