Parse OCR output into SharePoint Columns

I have a text file output from Microsoft's OCR connector in Flow.  The image being OCR'd is a table and the tool seems to read down the cells then across meaning that the text does not correlate to the row headings.  Is there a way to parse out selective text so as to align the values as seen in the image below or split these out so they can become values in separate columns in SharePoint.  Below are my inputs, outputs and flow (ignore the number of actions, I'll be culling aspects once I get the flow working so I can analyse the data in these images).

Also, is there a way to do a conndition that only runs on the 1st attachement as other images (signature images) are too small for OCR so make the flow seem like they all fail
