If you want to track the status you would need to build something your own. There is no out of the box feature for that.
So what I would do is building a dataverse table/entity or a SharePoint Liste where you track the status of the approvals. So you are technially not using 1 approval action. Instead you would start X different approvals which you can track individually. And the SP List is your status tracking place.
Or another approach would be that you loop over your approvers and send an approval individually (loop with concurrency) and then when an answer comes in you can track the status for the approver in your SP or dataverse.
Its lil bit workaround, but there is no other ways I know.
