I have a PowerShell script that returns a .CSV - So far we've been running this manually and then uploading it to our SharePoint.

You can use Power Automate Desktop (UI Flows) to run a PS script to convert CSV to Excel or you can also create a function app and call it in Power Automate to perform this action.
Apart from this there are some third part services like Plumsail/ Encodian that can be used for converting/ parsing CSV data.
