I would like to create a flow that uploads the attachments from the email, but it also uploads the files from the email text. Any solutions?

Unfortunately, I don't believe there is any way to differentiate between files that were attached to the email and those that were embedded in the email such as graphics under a signature line. I believe the best you can do is to check the file extensions that are commonly used for graphics before copying to the document library.
