Send email notification with category

Is it possible to send an email that contains an Outlook category? I have a solution that creates a SharePoint folder when a new item is added a list. It also emails the person mentioned in the list item as the "Leader". I'd like to assign a dynamic category based on the item.

I am pretty sure that categories are defined on the recipients side so no, the best you could hope for is to set a category on the senders side but it does not sound like that is what your after.

Currently, there is no way to set the category of the sended email, there is an idea about it, you can vote it to make it come true in the future:
