I would like to perform long running approvals (more than 30 days) . The approval process takes on average of 2 to 3 months in my company. Is there any other way to resolve?

There is no setting currently that would supersede this limit (at least not that I am aware), but thinking of some other way.
Maybe you can create a new Flow with the Approval action (which will act as a Reminder) and the subsequent ones, and the trigger can be When an http request is received.
Now, in your original Flow, you can add a parallel branch and Call the new Flow in it with the settings for Configure Run After set to - When Approval Action Times out.
This will actually set off another Flow and when the original one times out and send out a new Approval action as a Reminder.
