HI, I used the template that sends email(s) when new SP List item is created. It appears to be working by the checkmarks showing success, but I added my email to the email template (only change I made) and the workflow seems to be working, but I can't see any messages.sent
What could be the problem, since the email i used was v-sttaub@microsoft.com?

As @ScottShearer suggested, please check your Junk folder or โOtherโ inbox.
I have tested the template you mentioned on my side with my own email address, and it worked just fine, the email was in my Focused inbox. Please check it on your side.

I know this might sound silly, but have you checked your junk mail folder? If you are using a focused inbox, have you checked the "Other" mail?
I ask because I had this issue....

Thanks for your feedback and basically you were right.
I didn't see the messages originally and saw them appear. I can;t recall if i was in the focused section or there was a lag time for the messages to appear but I checked for a while, gave up and sometime a few hours later, they all appeared.
