Each time I run my flow I want to change the Excel input file, and I also want to change which Planner plan that is referred to. Do I have to edit the flow manually each time? Or are there some kind of dialogue windows I can use in the flow to ask the user for the Excel file and the Planner plan?

If you are kicking your flow off manually you can definitely add text variables to the manual flow trigger.  But the connector for Excel will require that you pick the file using the dialog.  If you use a text variable it won't be able to setup the connector and it will fail.
