Real life usage of Custom Entities, is it possible?

We have custom entity with a few items in it, and we're using this entity in the topic to identify user input
And, when user inputs something that our entity don't have, the Bot send this standard phrase('Sorry, I didn't understand.') as an answer, and this answer is not a part of authoring canvas, this standard phrase comes from somewhere else.

So, our questions
1 How we can change the text of this standard answer(standard phrase)?
2 If the Bot didn't find any item in the custom entity for user input we want to be able save this user input somewhere to analyze it later...How can we do it? Because right now, in this case, the Bot sends that standard phrase as an answer and dialog starts from the beginning

It looks to me like you are getting that message because it hasn't identified the topic from the trigger phrase rather than anything to do with the Entities.  I am using some custom Entities (including extracting them from the trigger phrase) and they work fine BUT the AI will only know how to allocate the input to the Topic that uses the Entities if the trigger phrases are broad enough for it to identify that the input utterance relates to the topic which is using the Entity. 

The Topic is not identified.

Like @NicholasPlant mentioned, this is happening due to the entered text not matching any topic trigger phrases, and not entities. But answering your other questions:

1) There is no way to change the standard reply today, but there is an idea created here by someone else

2) There is no way to save the customer entered text either, but it is something we're considering as a future improvement
