If I create an Activity regarding an Opportunity and I set the To field to userA, will userA be assigned the Activity ? If they aren't assigned the Activity , will they have write permissions on the Activity and read permissions on the Opportunity ?
Essentially, I'm trying to understand what permissions an Activity Party has on related Activities and their Regarding fields.

You can do a simple check 🙂
Click on Enitty table like Email/Appointment then click Check Access so that you can see the access for the same.

I'm aware of how to check the accessibility of a particular item. What I'm trying to determine is what default access an Activity Party has to an Activity and any entities it is "regarding".
Is it best practice to set the To field and the Owner field to the same person/team?
Activities (e.g. email, task,etc.) have a set of Activity Parties. The Activity attributes that relate to the Activity Parties include To, From, Organizer, etc.

To/From/CC/Organizer --> These are all fields, if we have append and append to permission we can use this field to map with the user
Owner Field --> This Denoted the Owner ship (with Access Level)
So we need to take into Owner Field alone for Consideration for the Permission level and we dont want to consider TO/CC/BCC/Organizer field
