Appropriate sharing: SharePoint Site, SharePoint Lists, Power App

I have an app created.

 

The data is saving to a SharePoint list.

 

How do I enable my users to use the app in all its functionality without allowing the users to view the underlying data?

Well what you could that after creating a new record (I suppose this is what your app is doing) is to create a flow that breaks the role inheritance. See an example here:

While this is not a good solution for my use case, which requires multiple contacts with the same document over time, it is a solution to my posted question, and will come in handy in the future, I can tell.
