I have shared a Canvas app with another user, assigned the security role, when trying to access the app on the mobile with that account, getting the below sign-in page for the CDS, is that expected behaviour? where do i find those details asked?

Based on the issue that you mentioned, I have made a test on my side, and don't have the issue that you mentioned. When I created a connection to Common Data Service within my PowerApps, it would pop up a OAuth 2.0 Authentication dialog as below:
there you should provide your own Office account to create a conection to Common Data Service.
On your side, please consider ask your end user to create a connection to Common Data Service within his PowerApps firstly using his credentials. Then try the shared app within his PowerApps Mobile App again, check if the issue is fixed.
Note: I assume that the end user own proper PowerApps license to use PowerApps. The Common Data Service is a Premium connector in PowerApps, if he wants to access Common Data Service functionality in PowerApps, he must own PowerApps Plan 1 license at least.
