I have a really annoying issue whereby when I access Dynamics 365 by visiting https://home.dynamics.com/ there is an app displaying that is linked to a 'Default' environment (first on the attached image) and I don't appear to be able to delete it. My actual Dynamics 365 that is used is configured on a seperate environment (second on the attached image).
I guess my question is this: is it possible to set the environment that is used as the default and then delete the other one? If not, how do I remove the unused Dynamics 365 instance that I didn't actually know was there from the default environment?

Yes.
For now, there's no direct way to hide apps in PowerApps.
I suggest you express your views about hiding apps on PowerApps Ideas Forum. Your precious feedback will be very helpful for our work.

As an alternative way, you could choose "Filter" to filter those apps that you do not want to display.

Firstly, it's not supported to delete default environment or change default environment.
The default environment is generated by system automatically. For now, it's not supported to customize it.
Secondly, do you want to delete a dynamics instance?
You need to browse to the Microsoft 365 admin center and sign in using Office 365 Global administrator credentials.
And then you could select the instance that you want to delete and click "delete".
