I am trying to get access to Apps and Flows created my an employee that has since left.
When trying to access one of the flows he created I get the message : "You do not have access to this flow."
My user have Power Platform Administrator role assign in Azure AD.
What am I missing here?

Go to the Power Platform admin center. There as an administrator you should be able to see all the flows. Using the context menu you should be able to add yourself to the flow.

As suggested by @Pstork1 if you have admin rights then you can give yourself access to flows created by others.

I get this error when trying to share with my account. Is there a way to check if I have the necessary rights?
Has the original owner's AAD account been deleted? If you are a Power Platform admin then you have enough rights to add yourself to the flow. But the error may be because the original owner account doesn't exist.
The accounts exists and is active (it's a account dedicated to creating flows). I could use that user I presume, but I'd rather be able to use my user.
You could just edit the flow using the dedicated account and add yourself as co-owner. Since you said the original maker had left the company I didn't think that was an option.
