Sending Email from two Environments (Default and Production)

It's long been the case that each mailbox can only work (send email) from one Environment. 

And this was ok (still a pain) in the Dynamics world, as we mostly only had one production environment.

However, we are building a Project for the Web solution for our users and it will only install in the Default Environment.

This means that we can't use native automated-emails that are record associated (e.g. Project Requests).

Does anyone have any suggestions as to to get around this? 

I know we can send O365 emails via Power Automate but these won't be associated with the relevant records.

The way outlook integration works I don't think there is any solution that will allow you to use 2 separate environments.
