I suggest having a button to refresh the tables from a linked Excel file (hosted on OneDrive). Currently, I am removing and re-adding tables in which I have made changes.
Ideally, PowerApps would be able to track changes to the Excel tables live, but that doesn't sound possible.

Your data connection will be refreshed on App Open. You may also manually refresh using the Data Sources area (click on the three dots and select "refresh").
I am facing the same issue. I tried the approach suggested by you but it is not helping.
The data is not getting refreshed, still showing the old values.
I have a Excel Data Source and there is not even a Refresh option.
I have added new tables to the spreadsheet and they do not show up.
Seems brutal to remove and re-add the Data Source.
I am having the same problem.
Excel added as Data Source but I have no refresh option at the top of the Data Source window or on the ellipses (three dots).
I added a refresh button on the app but this doesn't work either. Have tried with Excel saved and closed in OneDrive but to no avail
Whenever I change data I have to remove the Data Source and re-add to get the new data displayed.
Any help with this would be appreciated.
Did yu guys finally made the excel table data refresh OnStart of an App? I can't observe this functionality in my apps?
No, I never found a solution, Tried a few things then I moved the data to a SharePoint List and worked from that instead.
