This idea is beneficial to the part of the community that is not as knowledgeable in using REST and json files.
I suggest having a button to refresh the tables from a linked Excel file (hosted on OneDrive). Currently, I am removing and re-adding tables in which I have made changes.
Ideally, PowerApps would be able to track changes to the Excel tables live, but that doesn't sound possible.

Your data connection will be refreshed on App Open. You may also manually refresh using the Data Sources area (click on the three dots and select "refresh").
I am facing the same issue. I tried the approach suggested by you but it is not helping.
The data is not getting refreshed, still showing the old values.
I have a Excel Data Source and there is not even a Refresh option.
I have added new tables to the spreadsheet and they do not show up.
Seems brutal to remove and re-add the Data Source.
