Html to text inserts new line (\n) to break Outlook email body text into <80 character substrings

I have a flow that started failing randomly because the string that I used to parse the body text had a new line character (\n) replacing a space. When I looked at the raw output of the Html to text (Preview) step getting the body of an Outlook email, I noticed that the new line insertions divided the body string into substrings of length <80 where the last word in the string was always a whole word.

 

I am familiar with the general significance of 80 character lines, but why does Html to text (Preview) insert new line characters like this?
