I'm using the flow "Save my email attachments to a SharePoint document library", but I'm always getting the following error:

So the error is in office365 trigger itself.
If you use chrome, you can follow this steps to change languages.
https://support.google.com/chromebook/answer/1059490?hl=en
Make sure that english is in the top most list.
Let me know how you go with english flow.

But is that possible to try to debug this in english ?

I tried to change the language of the Flow portal, but I am only able to do it in the home page, not in the other pages.
Do you know if there is a way to do that?

I also changed the default language in IE11 and it worked too.

That's good at least this will unblock you at this moment.
Try to switch it back to Italian and use the same flow.
Check if your flow still running.
If it is not working than it is potentially a bug for different locale. I will file a bug for it.
