I would like to be able to get a notification when something was edited on a Sharepoint Excel file. So far, I can only seem to get a notification for who made an edit, but not what the actual edit was. I need to be able to see what was changed.

SharePoint doesn't track changes inside an Excel file. It only tracks that the file changed and was saved. To get the changes you would need to retrieve the previous version and do a comparison row by row to find the rows that changed. I don't think that's particularly feasible using a flow.
