I'm using the reminder template below to send an email reminder when near to due date.
Print Screen below is the recurrence and days to remind the recipients.
I would like the Flow to send only 1 reminder email 2 days before the due date. But, this Flow is sending email reminder 2 days before the due date on daily basis even after the due date.
How to fix this problem to send only 1 reminder email and stop further reminder after this.

Could you share details of the templates you use? Link or detailed screenshots to help us do more analysis.
I speculate that the filtering conditions configured in Scope led to this situation.

1st print screen below is the overview and follow with the expanded on each trigger/actions. Below with my inputs and the rest I follow the data in the template.
1. Recurrence
2. Days to remind me in
3. The emails in the Scope to get items due in 1 day
The due date is of the file to be updated is on 4th June. But auto reminders were sent after the due date.

I noticed that the advanced mode is still in use in the Condition. This feature has been removed so I guess you are using the Flow configured with the previous Flow template.
If you are indeed using a template, you could tell me its name so that I can search for it.
I am sorry that it seems a bit difficult for me to rebuild this Flow according to your description. I don't know details of Expressions and Get list name by HTTP request actions you use.

I get the standard template by go to the sub-folder, then click on Flow>Set reminder>Due Date per print screen below.

I tested it on my side according to your prompts. Maybe the logic of this Flow template makes you confused.
The intent of this Flow is to filter the items whose Due Date is equal to the current date plus x days.
If such items exist, send a reminder email.
You could check if the Body of the email reminder received every day is the same.
Check if Title is the same, if it is not the same, the Flow has been executed as expected, and the reminder email is not sent repeatedly.
In addition, if Due Date field does not include time, you could change Filter Query by referring to the following configuration:

Unfortunately, the Body of the email reminder received every day is the same. Thus, I need to turn off the Flow to stop sending the reminder.

It seems to be affected by configuration in Filter Query.
The judgment contains time, and the time zone set in the trigger may not be the same as the time zone set in SharePoint.
You could use the method I provided to verify the problem. If my method is work, it seems that the problem is that the configuration of Filter Query cause different results.
