I want to create a flow for a notification, ideally, a chat notification, whenever the Wiki (in Microsoft Teams) that our team is using is updated. I cannot find a Flow that supports the Wiki. Is this something that can be done?

It's unfortunate that there is no action that could approach that. Listen to the wiki page update on Teams is not supported yet.
Here is a similar idea already submitted in IDEA forum, you could vote for it, raise it to make it come true in the future:

Hi,
I found an indirect solution! Each wiki page is actually a file in the Team's sharepoint, "hidden" in a document library named "Teams Wiki Data". There you'll find a folder named General and inside you'll find a .mht file for each wiki page. With this, it's possible to create a flow triggered by folder changes (creation or update of files).
