I'm trying to Filter on a look up Field.
My primary data source is 'test' and it has a look to Facility name.
How do I filter?

If your Gallery is referenced by an Edit form or has some other record dependency, then Drop the columns in the statement:

Thanks, now I need to store the columns in a variable so I can sort by different columns, I think I just need to set the Column value in variable like 'varSortColumn' or something like that.
Avoid the variables...
What are you trying to accomplish? If you are thinking about using a variable to reference a column name, don't go down that road - you can't do that in PowerApps.
I want to be able to filter and sort by different look up fields...eg sort or filter on facility or department - both being look up fields.
Maybe I will use a "With" function to determine which columns to add and I will link this to a form with the same datasource.
That's fine...you just need to add them into the formula:
DropColumns(

anotherOne = "anotherName" ||

Replace the text parts in the criteria with anything you want to reference. For example (very common) you have a DropDown with values for Facility Name ... Formula would be facilityName = dropDownFacilityName.Selected.Value
And so forth...
quick question: do I need to do 'DropColumn' and 'AddColumn' twice one for Filter and another for Sort?
No, you can add as many columns as you want in the "inner" filtering, sorting, etc. The only reason to drop the added columns (in the outer part of your formula) is to avoid any conflict with any other items in your app that might refer to the record in your gallery.
For example, if you have an EditForm that uses Galleryx.Selected as it's item property, as soon as you add a column to your Gallery Items property (without dropping it) your EditForm will break with an incompatible record to the datasource.
