trying to configure the quicktasks from Powerapps to take email not from my inbox but from a team shared email
This is the line of code that most likely needs to be changed.
Set(LoadEmails, true);
Concurrent(
Set(MyDomainName,Last(Split(Office365Users.MyProfile().Mail,"@")).Result),
Set(LastSynced, Now()),
Set(EmailFolderName, "Inbox"),
//Create new option for a plan. This is the first item in the MyPlanSelection
The shared email is already configured in my outlook.
is there any way to do this:?

to mention that I found out that the only way to make this work is through Office 365 enabled groups.

Did you mean that you want to get emails from shared mailbox in PowerApps? As of now, PowerApps only supports GetEmails form a users personal mailbox. There is an idea submitted below, you could vote on it so that it might be considered for future release:
