I need to send out an email with options to several people and that seems to be working fine, however if Person B clicks the option and the workflow then updates the Sharepoint List the change is being recorded as last modified by myself rather than the person who clicked the option in the email.
Is there a way for the change to be recorded against that person instead of the one who created the original flow?

Could you please share a screenshot of your flow's configuration?
As you said the Person B just clicked the option in the email, did the person B edit the list in the SharePoint?
I have made a test on my side, when I shared a list to my colleague, then he edited the item.
The Modified By will change to his name. Shown as below:

Thanks for your feedback.
As the pic shown, it's not the Person B who clicks the option updated the item.
It's the owner of this Flow who modified the item.
So the list will not record the Person B.

So if more than one email address / person is specified in the send email with options step it does not matter who clicks the option button it will always come back as the flow author?
Kinda makes the ability to send email to multiple users useless
